An Afternoon with Friends

An afternoon with a special friend (and neighbour), a delicious cake, some sweet biscuits and kids scooting here and there - is truly the best way to unwind after a busy day.


I ended up baking the cake that we shared.  I used a recipe that a dear friend shared with me from way back when we lived in Perth.  Paddy was a wee one and Grace was still our little dream.  It's funny how recipes conjure up special feeling and emotions from a certain time in your life.

I love this recipe.  It has no eggs or butter and is so wholesome and delicious.  So good, that I wanted to share the recipe with you, too.

~Apricot Loaf~
  • 3/4 cup coconut
  • 3/4 cup raw sugar
  • 1 cup All-Bran
  • 1 cup chopped dried apricots
  • 1/2 cup pepitas
  • 1 1/2 cups self-raising flour
  • 3/4 cup rolled oats
  • 1 1/2 cups skim milk
  1. Grease or line loaf tin
  2. Preheat oven (180'C)
  3. Combine all ingredients
  4. Mix well
  5. Spread mix into a prepared tim
  6. Bake in oven for 55-60 minutes
  7. Turn onto a wire rack.
  8. Cool
